Taco Soup Recipe


Here is my recipe for Taco Soup.

1 pound ground beef
1 onion, chopped
1/2 green pepper, chopped
1 can Rotel tomatoes
1 can black beans
2 cans chili beans
1 can kidney beans
1 can corn, drained
1/2 c salsa
1 package Hidden Valley Ranch Dip Mix
1 package taco seasoning (low sodium, recommended)
12 oz tomato juice
12 oz water or beef broth (2 tsp dry beef base or 2 bouillon cubes, if not using broth)
1 tsp ground cumin

Brown the ground beef with onion and green pepper. Drain cooked beef. In large pot, combine beef with rest of ingredients. Simmer for at least 30 minutes. If the soup seems too thick, add more water or tomato juice or beef broth. (I use beef broth as I'm not a big fan of tomato juice)

After spooning soup into a bowl, top with a dollop of sour cream, shredded cheese, sliced black olives and crumbled tortilla chips.

Yummy!! I have seen this recipe many times, but never with the ranch dressing. I think this is a perfect weekend dish! How many does this serve?

Hmmm...I'd say this recipe would serve 6-8. Of course you can add more beans and juice to make it go further.
