I *heart* Velveeta


I improvised while making a soup creation by using what I had on hand while in desperate need of a grocery shopping trip. In other words, slim pickin's in the fridge and pantry. I had some cooked and shredded chicken in the freezer so I started with that. In the fridge, I found some Velveeta and in the pantry, a can of cream of celery soup and evaporated milk (probably belonging to Eric-- (family inside joke)). I was thinkin' soup. I love soup and I love potatoes in soup. So, I peeled and diced 4 small potatoes and par boiled them. I dumped the can of soup and evaporated milk in a pan, started the heat on medium, and then added around 4 oz of Velveeta cubes, the potatoes and 1-2 cups of milk (I just poured it in for the consistency I was looking for). Then I added the shredded chicken. I stirred and stirred until the Velveeta was melted. I also added in a tablespoon of butter--not sure why, probably didn't need it but it sure wasn't going to hurt. THEN, I nosed around in the freezer and found an 8oz package of broccoli and carrots in a "lightly seasoned garlic and herb sauce" which I cooked according to directions and also added to the soup. I let the pot come to a slow bubble and then turned the heat back to keep the soup warm--it thickened up nicely and was creamy and delicious! How could it have not been good? I used Velveeta, after all.

Yum! This sounds great. My brother loves Velveeta too. I send it to him as a gift. LOL It costs $400 in Hawaii. *a slight exaggeration*
