Oatmeal Cake

Here is a delicious recipe for oatmeal cake (Mom's recipe). I have requested this cake for my birthday many, many times. In fact, Mallory made one for me on my last birthday. It's moist, easy to make and oh-so good. I use canned cream cheese or vanilla icing for my cakes. I think a coconut-pecan icing would be good too. I considered posting a picture of the finished cake but it's not very pretty. The thing is, I was anxious to use the new cake pans I got for Christmas so I made a layer cake but it turned out looking like a lump of cake. The cake is heavy which is why the recipe calls for a 9x13 pan.


Mom's Oatmeal Cake


INGREDIENTS:
1 1/2 cups boiling water
1 cup rolled oats
1/2 cup butter
1 cup packed brown sugar
1 cup white sugar
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon vanilla

1/2 teaspoon salt


DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 pan.
2. In a small bowl, pour boiling water over oats. Mix well, and cool.
3. In a large bowl, combine butter or margarine, 1 cup brown sugar, 1 cup white sugar, eggs, flour, baking soda, spices, and salt. Add cooled oatmeal mixture, and stir to combine. Pour batter into pan.
4. Bake for 35 minutes.

I have never heard of Oatmeal Cake!! I may make this tomorrow!!
